We have been busy making breads and cakes this week.  Our best seller has been a 7 layer cake with homemade fudge icing.
 


This recipe is an old family favorite, my Aunt Grace made one for every family gathering.

The  Icing Recipe is:
3 cups sugar
6 tablespoons cocoa
1 teaspoon vanilla flavoring
1 1/2 cups milk (We use evaporated milk)
1 1/2 sticks butter
1 cup chopped pecans (optional)

Mix sugar, cocoa, and milk.  Bring to a rolling boil and cook for 8 minutes.
Remove from heat and add butter and vanilla.  Stir until all butter melts.  Add pecans and stir.
Let icing cool to spreading consistency and spread between layers.

Try not to "taste"  too often, you want to be sure to have enough to cover the cake!

We use a large heavy pot for this recipe because the mixture will more than double in size when it starts boiling and then cook down quite a bit.

Baby Shower Bubble Bath

Baby shower cakes are always fun to make. 

This is a 2 layer cake covered with fondant and buttercream icing.

I made the layers, iced them with a thin coating of buttercream icing and then applied fondant strips for the barrel.

The light brown strips were cut 1 1/2" wide x the height of the cake  The dark brown strips were cut 1" wide x 12" long for ease of handling.  Stand the light brown strips on end and press gently to the buttercream.  Brush a light coating of water on the dark brown strips and apply to bottom and top of barrel. Join strips as needed by placing together as close as possible.

Ice the top generously with fluffy buttercream.  Place the plastic baby and put icing on the baby to look like bubble bath.  I even put some on the head.

Roll white fondant into different size balls for the bubbles.  You can roll the fondant balls in cake sparkles for a soap bubble look.

The rubber duckies and a baby washcloth completed the look.  The couple loved it!

Gumpaste Flowers

The beautiful piece of art I'm holding is a gumpaste Christmas arrangment that I made in a class with Nicholas Lodge in Georgia.  This can be used as a cake decoration or table decoration.  It is a sugarbased product and is technically edible, but I wouldn't suggest it since there's florist wire holding it together!
 

 
These two gorgeous gumpaste creations were made at a private class in Greensboro.  They look so real, don't they?
